Weigh In 7/6/12

+4lb, weight = 12st 11.5lb, total loss 1st 9lb.

I am so glad I’ve been back on track the past few days – my scales said I was up to 13st at the weekend ooops… I’m not too worried, that gain is over 2 weeks and in that time I’ve been for 4 meals out, 1 wedding, 2 concerts and 1 family BBQ!  I’ve hardly had any time for meal planning which is the key to losing on Slimming World.

This is my meal plan up until I go shopping again on Sunday:

Friday:

Breakfast – Banana, strawberries, grapes & toffee Muller Light

Lunch – Wagamamas…. (my one naughty meal this week!)

Dinner – One Pot Chicken with Cous Cous (from SW All In One book)

Snacks – Wholemeal toast x2 (HexB), jam 2x 1tsp (1 syn), cheese (HexA), fruit.

 

Saturday:

Breakfast – Banana, strawberries, grapes & toffee Muller Light

Lunch – Scrambled eggs, wholemeal toast x2 (HexB), cheese (HexA), mushrooms

Dinner – Chicken curry SW style, rice

Snacks – Curly Wurly (6 syns), fruit

 

Sunday:

Breakfast – Bacon, poached eggs, baked beans, wholemeal toast x2 (HexB)

Lunch – Ham salad, fruit, Muller Light

Dinner – Probably a roast

 

I will be back later to post the recipe for the dinner I had on Wednesday: Cheese, bacon & potato hash.  Will also try and work out how to share a PDF download of the charts I made & laminated to keep track of my syns, water & healthy extras.

Spicy chicken with lemon & coriander cous cous

One of my favourites!

Chicken breast coated in a mixture of turmeric, curry powder and salt and roasted for 15mins, I put the tomatoes in about halfway through. I cooked the cous cous with chicken stock then just mixed in some chopped coriander and lemon juice when it was done. Mint sauce is just fat free natural yogurt mixed with chopped mint.

Risotto with butternut squash, peas, broccoli, chilli & garlic.

I love risottos – so filling and easy to make SW friendly.  This one is also yummy with bacon added.

Risotto with butternut squash, peas, broccoli, chilli & garlic

Ingredients:

1 onion

1 or 2 cloves of garlic, crushed

Butternut squash (cut up small so it cooks quickly)

Chilli (I use a little bit of the Lazy Chilli in a jar – I always end up with chilli in my eye if I try and use fresh ones!)

Arborio rice (I think I use about 250g when making it for 2 of us)

Chicken or vegetable stock (about 1 litre)

Peas

Tenderstem broccoli

60g parmesan (for 2 people)

Method:

Chop an onion and soften in a pan with Frylight and a little bit of water to stop it sticking.

Add garlic, chilli & butternut squash.

Add the rice and stir for a minute or so, then add a little bit of stock and stir while the rice absorbs it.

Keep adding more stock and stirring until the rice is cooked (about 20mins), adding the peas and broccoli for the last few mins. Season.

Stir in some grated parmesan (you might not need the whole 60g, parmesan goes a long way!)

Pizza topped chicken & salad

IMG_2038This was my lunch yesterday – pizza chicken and salad, yum!

Ingredients:

1 chicken breast

1tbsp tomato puree

1/2tsp  oregano

Super free vegetables for topping (e.g pepper, mushrooms, onion etc)

Hex A worth of cheese (I used half as I wanted to use the other half for dinner)

Method:

Cut chicken breast into a butterfly, open out, flatten and roast for 5mins.

Spread tomato puree on chicken, sprinkle with oregano, add vegetables & cheese.

Put back in the oven until chicken is cooked through & cheese is melted.

Salad was made with lettuce, tomatoes, pepper and hard boiled eggs.

To make the dressing I mixed 1tbsp fat free yogurt with 1/2tsp dijon mustard, 1/4tsp granulated sweetener and 1tbsp lemon juice.

Curry cravings in pregnancy will never end well…

This is bound to be long and boring so feel free to have a nap instead of reading it!

I fell pregnant with my eldest son, Dylan, when I was 18.  I was a size 10-12 and 10 stone before the cravings kicked in – curry, and lots of it.  By the time Dylan was born in December 2005 I was 4.5st heavier and size 20… yikes!

When Dylan was 8 weeks old my now-husband and I moved out of our parent’s homes and into our little flat.  I wasn’t very good at cooking from scratch so bought a lot of processed food, and we lived on a road full of takeaways: we ate a lot of junk!

In September 2007 our daughter Daisy came along.  I actually lost weight during that pregnancy, despite my cake craving!  I was a size 18 and lost 1st on Weight Watchers for our wedding in July 2008.  I didn’t like my time on Weight Watchers at all, some people swear by it but I found it all too easy to waste my points on rubbish early in the day and then be hungry all night!

I first joined Slimming World in 2009 when my neighbour became a consultant.  It was so easy to do, I was losing weight really well and got down to a size 16, until my husband’s work commitments changed and I couldn’t go to group.  I told myself I would carry on at home but without the weekly weigh in it never happened!  Christmas arrived and I was back to a size 20 :(  I should have started up again in January…

Main meals were fine, I could cook by then and still cooked everything in a Slimming World friendly way.  But I went back to having sugar in my tea instead of sweetener, filled up between meals on toast and chocolate etc, and counting syns didn’t cross my mind.

When I found out I was pregnant in August 2010 I resolved to eat better.  That decision combined with horrendous morning sickness meant I lost a stone while I was pregnant.  A few days after having Noah in April 2011 I decided to I needed to go back to Slimming World.  I waited until he was 5 weeks old and breastfeeding was well established before going back to my old group.  I was worried as I didn’t know anyone, but having a newborn baby with me proved to be a great conversation starter!  I took it slowly at first as he was so young but as he got bigger I found it easier and started losing more weight.

In October 2011 I won our group’s Miss Slinky competition!

By Christmas 2011 I had lost almost 2st and was down to a size 16.  This year started well but unfortunately the last couple of months have been very hectic – I have made wedding cakes and been bridesmaid at 2 weddings, organised and been to 4 hen parties (including a weekend in Bath and a few days in Marrakech!), and done the London Moonwalk!  I have had less time and energy to plan my food so my weight has crept up a little and I’m now back at a 1st 13lb loss.

I’ve decided to start writing this to get me back on the wagon and to share my photos and recipes.  I called it '18 to 10' to remind myself of the size I was and the size I'm aiming for - hopefully it will keep me on track!
